Because these pasture-fed animals have spent their lives lifting and lowering their heads while grazing, these shoulder pieces have more pronounced growth marks. The shoulder is a strong and dense part of the hide; each piece varies in shape and size. It is common to see scratch marks from hedges, trees or fences. These are half shoulders, because our tanning process requires us to cut our hides into two pieces, so the shoulder area gets split in half.
